Demystifying diets - Salmon recipe

Various food in our diet have a great beneficial effect on our body. We can divide our diet into an anti-inflammatory diet or a diet which can boost the thyroid function and metabolism. We can also look at the best diet to detoxify the body or help with diabetes and definitively at a diet for lymphoedema and lipoedema.


These different diets have something in common. They all look at eating more green vegetables, specifically cruciferous, which are vegetables from the cabbage family, more fruit, fish, nuts and seeds, herbs, and spices. All these ingredients are anti-inflammatory because they contain a high level of antioxidants. A thyroid diet may look eventually at also increasing the iodine level, which is an essential trace mineral that helps the brain function properly and helps the body to properly metabolise the energy from food (Group, 2018). In the list of food to eat I can now add seaweed and seafood, although apparently berries, particularly cranberries, and potatoes also have a high content of iodine.


Let’s put into practice this information with a recipe for “cranberry and salmon salad”. Try to buy your ingredients organic and wild salmon if possible.

Ingredients:

2 skinless pieces of salmon

4 tbsp cranberries (you can find organic dried cranberries infused with organic apple juice)

1 apple diced

2 tbsp flat leaf parsley minced (you can also use chives or other herbs of your liking)

2tbsp balsamic vinegar

4 tbsp cold pressed olive oil

2 tsp lemon zest

½ tsp Dijon mustard

1 sprinkle of salt and pepper


Method

Cut salmon into pieces

Mix with cranberries and apple dices

Make the vinaigrette using all other ingredients

Add salmon to your vinaigrette and sprinkle with parsley
